Sausage Kitchen We use only fresh and natural lean pork shoulder, spring lamb, boneless-skinless turkey breasts and thighs, and beef chuck--no meat byproducts. Our sausages are 15% fat or less. Every batch is handmade in small amounts, never mass produced. Our seasonings are individually blended for each recipe. We never use pre-packaged spice mixes. Fresh varieties contain no MSG or preservatives of any kind. Smoked sausages contain a very small amount of sodium nitrite necessary for curing and are smoked naturally with hickory chips in our own smokehouse. Smoked varieties are fully cooked and ready to eat either cold or heated any way you like.

Our guarantee covers not only the quality of our product, but also your complete satisfaction. If you don't like our sausage, for any reason, we will refund your money.


Pricing:

Pork and turkey sausages are $7.50 per pound; lamb varieties are $8.50 per pound. Shipping within Maine is available. Call, e-mail or fax for details.

Sausage List:

Beer - mildly flavored and lightly spiced with a blend of salt, brown sugar, onions, fresh garlic, black pepper, cayenne pepper, mustard seed, marjoram and paprika. Serve with salads, sharp cheese, hot mustard, etc. (Smoked pork only)

Bratwurst - a finely textured pork sausage made with salt, whole milk, fresh eggs, white pepper, mace, ginger and nutmeg. Serve hot as an entrée with potato or rice and vegetables, or sliced cold for snacking with crackers, rye bread, sharp cheese and hot mustard. (Fresh or smoked pork)

Cajun Andouille - a Cajun smoked specialty now famous nationally. Made with pork shoulder, salt, garlic, black pepper, chili powder, mace, allspice, thyme, sage, red pepper and cayenne pepper sauce. Pan blacken and serve with rice and vegetables or in gumbo. (Smoked pork only)

Canadian-Style Breakfast Sausage - Pork, salt, white pepper, ground and rubbed sage, ginger, nutmeg, allspice, thyme, cayenne pepper and parsley. Natural maple sugar added for our maple sausage.
Our skinless, breakfast sausage links are also available in Irish and English Bangers, Fall Harvest, Chorizo and Maple. Bulk and patties in some varieties. (Fresh only)

Chaurice - Spanish/Creole pork sausage. Contains pork, onion, garlic, salt, cayenne pepper, chili pepper, crushed red pepper, pepper sauce, thyme, parsley, bay leaf and allspice. It's great with white, red or black beans, or as a breakfast sausage with eggs. (Smoked pork only)

Chorizo - a hot, peppery sausage seasoned with a blend of salt, cider vinegar, paprika, a mixture of cayenne, red and black pepper, garlic, oregano and fennel. Try on pizza and with Mexican/Spanish entrées and pasta salads. (Fresh or smoked pork; smoked lamb)

English Banger - a mild breakfast or dinner sausage flavored with salt, soy, white pepper, ginger, sage and paprika. Excellent served with mashed or home-fried potatoes, pasta or green salad. (Smoked lamb; pork, fresh or smoked)

Fall Harvest - organic, dried apples and cranberries, cinnamon, nutmeg, allspice, maple syrup, salt and white pepper. A tasty treat served as a breakfast sausage with eggs and potatoes or pancakes and syrup. Also very good added to stuffing. (Fresh pork only)

Fennel - garlic, fennel seed, pepper, salt, oregano, allspice, sundried tomatoes, soy, fresh parsley, fresh cilantro and olive oil. Serve as you would Italian sausage. (Fresh only)

Greek Loukaniko - for those who enjoy a unique taste treat. Seasoned with salt, wine, fennel, orange rind, garlic, cinnamon, allspice, coarse black pepper and oregano. Wonderful accompanied with Greek salad, feta cheese and rice pilaf. Barbeque and sprinkle with fresh lemon before serving. (Pork or lamb, smoked only)

Irish - a taste o' the Emerald Isle. Pork, soy, thyme, salt, marjoram, basil, rosemary, mace, ginger and pepper. Serve with homefried potatoes and eggs for breakfast or with your favorite potato and vegetable dishes for lunch or dinner. (Fresh or smoked pork; smoked lamb; smoked turkey)

Kielbasa - a hearty, old-fashioned sausage seasoned with a blend of salt, brown sugar, fresh garlic, onion, marjoram, pepper and paprika. Delicious with boiled potatoes, cabbage salads, sauerkraut, or cheese and crackers. (Fresh or smoked pork; smoked lamb; smoked turkey)

Mettwurst - a finely textured pork sausage flavored with salt, nutmeg, white pepper, ground celery, allspice, marjoram, caraway, coriander, brown sugar and mustard seed. Recommended with crackers, cheese and mustard, sliced for sandwiches, or as a dinner sausage with potatoes and vegetables. (Fresh or smoked pork)

Old-Fashioned Country Smoked - a delicious, hearty sausage with an old-fashioned hickory smoke flavor. Made with pork, beef and smoked bacon, and seasoned with salt, brown sugar, fresh garlic, pepper, marjoram and paprika. Serve like kielbasa. (Smoked pork only)

Old-Fashioned Smoked Turkey - mildly seasoned with salt, white pepper, ginger, sage, basil, mace and paprika. Very low fat, excellent both for snacking or as a dinner sausage. (Smoked turkey only)

Sicilian Wine & Cheese - an Italian taste treat containing wine, Romano cheese, salt, brown sugar, red and black pepper, and garlic. Exquisite served with pasta, rice, or pasta or potato salad. (Smoked pork only)

Spicy Mediterranean - Fresh cilantro, parsley, mint, sundried tomatoes, bruschetta, pine nuts, olive oil, salt, garlic, cayenne and black pepper, cumin, coriander and allspice. Delightful served on a bed of oven-roasted tomatoes, peppers and onions, with rice pilaf, salad and your favorite wine. Good snacking sausage with wine, cheese, bread sticks or crackers. (Lamb or pork; smoked only)

Swedish Potato - pork, beef, bacon, onion, salt, white pepper, allspice, low-fat dry milk and potato. A very good dinner sausage served with potatoes and vegetables. Also excellent served as a breakfast sausage or added to your favorite stuffing. (Fresh only)

Sweet-Hot Italian - seasoned with salt, sun-dried tomatoes, fennel, a mixture of red, black and cayenne peppers, brown sugar, caraway seed, coriander, fresh garlic and oregano. Excellent on its own, as the meat component for spaghetti sauce or other tomato-based dishes, or with macaroni or potato salads. (Fresh or smoked pork; smoked lamb; smoked turkey)

Cooked Salami - beef, pork, salt, natural maple sugar, cardamom, garlic, peppercorn melange, parsley and olive oil. Great for sandwiches, on pizzas, salads or just plain snacking, with cheese, mustard, crackers, bread sticks and your favorite beverage.

Cretons - a Canadian-style pork spread (paté) containing lean, ground pork shoulder, soy, salt, pepper, cinnamon, clove, allspice, onion and garlic. Excellent on toast, bagels, English muffins, or on your favorite snack cracker with cheese or mustard as an hors d'oeuvre.

Trail Jerky - thinly sliced beef round marinated in soy sauce, Worcestershire sauce, onion powder, garlic powder, black and lemon pepper. Smoked to perfection with hickory and cherry wood in our own smokehouse.

Trail Sticks - ground beef and pork seasoned with salt, paprika, ground mustard, lemon pepper, ground white peppercorn, ground celery, garlic, Worcestershire sauce and natural hickory smoked.

Trail Strips - ground mixture of beef and pork, moulded and pressed into thin, uniform strips. Cured like our Jerky and available in Spicy Chorizo and Cajun Andouille flavors.

All Trail products are excellent as healthy snack foods, low fat and low carb for those on diets. Delicious cut in small pieces and sprinkled on salads, in scrambled eggs, on pizzas, in soups, etc.
