1 lb Spicy Mediterranean smoked sausage
4 to 5 med. Potatoes cut in half lengthwise, then cut into ¼ inch slices
¾ cup onions, diced
6 slices bacon
1 tbsp. minced garlic
2 cups kale leaves chopped
1 gal. chicken stock and water
1/3 cup cream or evaporated milk
Cook bacon in skillet until crisp and remove. Cook onions in bacon fat until onions are almost clear. Add garlic to onions and cook an additional minute.  Crumble bacon.  Combine all ingredients except kale to a stockpot and bring to a boil, stirring occasionally. Take off heat immediately upon boiling, add kale. Let sit covered for one hour and serve.
