- 4 tsp Olive oil
- 1 large Onion, minced
- 1 clover Garlic, minced
- 4-6 Potatos, unpeeled, sliced or cubed
- 2 qts. Chicken broth
- 1/2 lb. Linguica, thinly sliced
- 1 lb. Kale,rinsed & sliced thinly (remove the very t thick ribs)
- Salt & Pepper to taste
In a large pot, cook onion and garlic in olive oil. Add potatos and broth. If using fresh (raw) sausage, add it now, if smoked (fully cooked), add with kale. Bring to a boil, reduce heat, cook intil potatos are tender. Add kale, salt & pepper and kidney beans (optional). Let stand 15 minutes before serving. |  |
