Description 

  • 1 p 1 pound sweet/hot Italian sausage (bulk)
  • 1 la 1 large onion
  • 1 c  2 cup orzo pasta
  • 24   24 oz chicken broth
  • 1 p  1 package frozen chopped spinach
  • 2 T  1 tbs. basil
  • 1 T  1 tbs. minced garlic

In a large skillet, cook chopped onion in olive oil until tender, then add basil and garlic.  Place loose sausage in large stock pot, breaking up sausage into small pieces, cover with broth and water to desired level  Add remaining ingredients, cover pot and bring to a boil.  Turn off burner and allow to sit for 15 minutes, stirring occasionally.
