We like garlic, and we like fennel, so we knew we would love these sausages! We purchased while visiting friends up in Maine, and froze them so we could eat them whenever. It's been over a year, and we took the frozen sausages from the freezer and put them directly in a Sous Vide bath at 140F for 1 hour. That brought the internal temperature up to 138F. I then browned them under the broiler. Bingo! They were perfect!
Slightly spicy but not hot and a wonderful flavor combination. We had this for supper tonight (along with locally grown potatoes and apples, and fresh bread from the farmer's market!) and it was as excellent as everything we've ever bought from the Sausage Kitchen.
We live close enough to make a couple of trips a year to stock up the freezer. Your sausage is super lean and freezes really well. We'll definitely be back for more!
