Description 

1 pound smoked sausage (Beer Sausage worked best, but I've also used Bratwurst and I'm sure you could try others), halved lengthwise and cut into 1/2 inch slices

1/2 of a 28oz. package frozen diced hash brown potatoes with onion and pepper (often sold as potatoes O'Brien)

1 16oz. jar sauerkraut, rinsed and drained

2 tablespoons stone ground mustard. (I've had best luck with Inglehoffer brand)

3 14oz. Cans chicken broth (I've been using one low sodium 48oz. cans)

Small amount of red onion or red cabbage to garnish

Steps:

1. In a 4-5 quart slow cooker, place sausage, frozen potatoes, sauerkraut, and mustard.  Pour broth over sausage mixture in cooker.

2.  Cover and cook on low heat setting for 7-9 hours or high heat for 3.5-4.5 hours. Top each serving with small pieces of red cabbage or red onion.  Makes 6-8 servings
